Perhaps you’ve recently seen “pizzelle” sold in your local Trader Joe’s or food store. Pizzelle cookies are likely found in the sweets or cookies section. They are flat and have a snowflake pattern on them. When you’ve see them you most likely ask what exactly is pizzelle and how can I make some? (Note the “zz” is said like the “zz” in “pizza”.)
Pizzelle is traditionally an Italian treat that’s eaten around Yuletide time or Easter. It is also served with ice cream or at marriages during anytime of the year.
It is a light, crisp cookie, similar to a flattened ice cream cone. Infrequently it’s seasoned with lemon or orange zest. Often you could see two Pizzelle served pressed together with ricotta filling to make something like a cannoli. Another option is to serve them plain with jam, milled sugar, or chocolate syrup.
Pizzelle cookies are basically quite easy to make if you’ve got the right ingredients —eggs, flour, sugar and butter and a pizzelle iron or maker. Here is one of my favourite recipes for pizzelle cookies.
This recipe makes 16 pizzelle cookies.
Ingredients:
2 eggs
1/2 cup sugar (white)
1/3 cup butter, softened
2 little spoons vanilla extract
1 cup and 3 big spoons all-purpose flour
1-1/4 teaspoons baking powder
Directions:
In a medium bowl, beat with an electric beater the flower and sugar until thick and pale yellow. Mix in softened butter and vanilla. In a little bowl, mix the flour and the baking powder. Then, mix in the flour mix from the tiny bowl into the larger bowl of egg mixture.
Preheat your pizzelle maker or iron. Once hot, add a little oil or butter (unless it’s non-stick). Then add a touch of the pizzelle mix. Cook for about 30 seconds until no more steam comes out of the iron.
Cool for storing on the counter or in the chiller, but be sure to enjoy one or two hot off the iron warm pizzelle cookies are very tasty.
